Korean food has definitely become one of my comfort foods! I crave for Korean food every now and then and since they aren’t so easily available near my neighbourhood, cooking up a simple Korean dish now and then helps to satisfy my cravings! So today I decided to record down the process of me making Kimchi Fried Rice!! For my version, I added spam/ham and mushrooms! You don’t have to use spam or mushrooms, some people use tuna and some simply use kimchi only!
Ingredients you need:
- Kimchi (chopped to small pieces)
- Rice (I used one cup of cooked rice, which can feed 2 people)
- Spam (chopped to small pieces)
- Shiitake Mushrooms (chopped to small pieces)
- Garlic (finely chopped)
- Sesame Oil
- Gochujang (Gochugaru is fine too)
- Soy Sauce/Salt (to taste)
- Dried Seaweed/Laver
First step is to fry the egg, I’m pretty everyone knows how to do this! It’s okay if you put too much oil, because we can use the remaining oil to continue the next step! After frying the egg, trying your best to retain a runny yolk, set it aside until we finish cooking the fried rice.
Add in garlic, spam and mushrooms and stir fry. After awhile, add in gochujang and a bit of soy sauce and stir fry until they are cooked.
Add in the chopped kimchi and stir fry. At this point, the kimchi should have caused the mixture to be a bit watery, you can add in a bit of the water from the kimchi to make it more flavorful, if not just add abit of water and continue to stir fry. Add in roughly a tablespoon of sugar, and sesame oil! Continue to stir fry after that.
After which, add in the rice and mix and fry! I don’t really have a specific timing to how long you should fry it for, but make sure the rice doesn’t become burnt, then it should be fine!
Is it true that if you use overnight rice when making fried rice, it tastes better? I can never taste the difference.. haha!
Depending on your taste, you can add a bit more sesame oil or soy sauce/salt if you feel it’s too bland. But usually kimchi fried rice doesn’t require alot of seasoning because the kimchi itself is tasty!
Add a slice of cheese (if you wish), and place the egg on top of it. Make sure to place the cheese immediately so it slightly melts! If you have sesame seeds, you can sprinkle a few over, but I don’t so… hee.
Ending touches, seaweed for that crunch and extra flavor and you’re done with Kimchi Fried Rice!! It’s a relatively easy meal to make, so you don’t have to pay ridiculous prices for a plate of Kimchi Fried Rice outside!
